I love all the ingredients in this but I am a lazy cook. Making zucchini boats is almost too much for me to bear. In a 12" cast iron skillet, I browned ground chicken & onions. Added in a bag of frozen zucchini, a bag of southwestern corn/black bean mix, a can of rotel, all the spices in the recipe, covered with cheese, & baked for 20 minutes. Served it with tortilla chips and it was amazing!
