Made a few changes. Used 2 boneless, skinless chicken breasts, 1 envelope of southwestern ranch street taco seasoning, 16 ounce jar of medium salsa, black beans, corn, green onions, added fresh tomatoes, pico and sour cream over brown rice. Didn’t add cheese. Cooked in slow cooker on low for 4 hours, then took out chicken shredded it, added back in mixed with beans, corn and salsa. Will use leftover chicken mixture in whole wheat tortillas and add refried beans for burritos.
