My bf and I LOVE this meatloaf. Super healthy but still delicious. The only thing is I use 1 shredded zucchini instead of mushrooms, and I add some things to the ketchup so it's not straight-up ketchup. I usually will add brown sugar, Worcestershire sauce, and last time I think I added sriarcha lol. Serve it up with mashed sweet potatoes, frekin scrmptious.
