When I made this for my family, we ended up having quite a bit left over. The next day I reheated the chicken in a pan and cut it up into cubes. I put the chicken and then the salsa/corn/bean/cilantro mixture into a salad with some cucumbers, croutons, shredded cheese, and then everyone chose their dressing. It was delicious and an easy way to get two meals out of one night of cooking.
