I have to be honest… I didn’t follow your recipe so much as use it as a guide to create my own deviled egg potato salad.
We had elk burgers as our special tonight at work and the boss wanted deviled egg potato salad to go with it..
I feed anywhere from 15-75 so obviously I scaled the recipe. I also added a generous amount of paprika, a lil garlic powder and I subbed red wine vinegar for the white. I also puréed about 8 extra hard boiled egg yolks and mixed it in with my mayo and mustards (spicy brown and yellow) and poured it over my potatoes, relish and eggs (diced large, because hey it’s called deviled egg potato salad). I also added fresh diced dill on top and another sprinkle of paprika. The members who had the special tonight raved about it. Thanks for the recipe.
