This was a huge hit! My wife said this was the best pasta sauce I've ever made :) it was extremely easy to make, just requiring a bit of babysitting, and few ingredients! Really good quick homemade pasta sauce that is a little different than usual - red bell pepper taste came through really well.
I did add half a shallot in along with the garlic, just because I had it, and I highly recommend it.
