I've never been a fan of rolling out pastry or "blind baking". Shop bought pastry is more than satisfactory. This is a game changer ! I promise, less than 3 minutes to pull the dough together and another 3 to squish it around your pie plate using your fingers. It may not be the best quiche or pie crust every tasted but so great in a pinch for a weeknight quiche. I make my quiche recipe without pre'cooking this pastry. Delish
