I only had a very small portion of this because my husband and son ate almost all of the casserole before I was ready to eat. I read previous reviews and while I understand that this is sort of like nachos (minus the refried beans), but I am not going to hold a recipe hostage because of its name. Overall a great way to use leftover chili and corresponding toppings.
I did a few things differently: I used my homemade chili instead of store bought; added a layer of Colby Jack between tortillas and chili and topped with black olives and fresh sweet peppers. After eating my son told me to give Emily a big thumbs up.
I don’t know who Emily is but here’s my thumbs up.
