Holy smokes this is good! I didn't have Irish Cheddar so I used sharp. Loved it. I think I'd like large-chopped tomatoes in it. Super quick & easy to make, but next time I'll mix the hashbrowns & cheese with the cabbage mixture in a large bowl. There just wasn't enough spice in my cast iron skillet to mix it all well.
Okay I added tomato. It's not horrible but I think next time I'll add it after it's cooked.
