Easy and delicious! I took the advice in the comments and used a thick pasta sauce instead of the passata (not sure what that is TBH), and everything worked out great for us. I feel like frozen spinach did just fine in this dish, but if you want to cook down fresh spinach I'm sure it'll make it tastier.
I really want to make a batch and freeze them for the future. Not a huge fan of thyme so I'll probably leave that out next time, but everything else was great.
