This felt a little time consuming but that is only because there were several steps in and out of the oven, and one stovetop step. All the steps were pretty simple though, and there was minimal chopping to prep.
My sweet potatoes were not that big but they needed more than 50 minutes at 375. If I make this recipe again, I’ll increase the oven temp, maybe to 400. I left out the yogurt and just served with sour cream, avocado, cilantro, jalapeño, green onion, Cholula, and beet sprouts. My husband and I liked it; my four year old was not impressed.
