After trying dozens of lemon bar recipes, I've found the prefect one! The shortbread base is sturdy and flavorful and could easily be cut up and eaten alone. The custard layer is considerably thicker than in every other recipe I've tried and provides the perfect ratio of smooth, tart, lemon curd to slightly crispy, buttery shortbread.
