This is a super delicious and hearty soup and really simple to make. It helps to have all the ingredients ready before starting the soup since it comes together so fast. I also noticed the tortilla strips were crispy around the 12 minute mark, probably would have burned after 15.
Recipe calls for rotisserie chicken, but I use raw chicken instead sometimes for convenience.
- Get all the other ingredients to a boil, reduce to low heat
- add 2 chicken breasts or 4 chicken thighs per recipe
- simmer covered for up to 30 minutes until the meat comes to temp
- take the chicken out, shred it, and return it to the pot.
I find this easier than getting the meat off a rotisserie chicken too.
