I chopped up the squash the night before we made this, so it was 30 minutes start to finish. It was so good the kids ate it! We served it with some Aidell’s chicken apple sausage. I may add more roast veggies next time.
The only quibble I have is that the author measures the kale in bunches but how much is a bunch? I feel like it could have had more kale. I wish authors would put measurements like cups or weight.
