It was okay flavor wise, but hard to eat. The outside of the onion after cooking was too tough to eat, maybe I did something wrong, I don't know. It was kind of labor intensive hollowing out the onions. Also, there was no way that you could use all of the onion that you carved out to put back in with the stuffing... That would simply not fit and be waaay too much onion.
