Instead of cream cheese, I used a handful (8-9) of those mini golden potatoes with skin on. This allows it to achieve the creamy and thick texture without the added calories from the cream cheese. I also added another cup of broth and used parmesan truffle seasoning mix in lieu of the salt/pepper spices.
