Be sure to let the batter rest. It is a very thick batter. Also, cook on LOW heat. These will burn and flatten out on high heat. I also added 1/2 teaspoon of cinnamon to the recipe for more oomph of flavor.
I have made a few more adjustments to this recipe. I switched out the cup of flour to ¾ cup + ¼ cup of almond flour. I also started making these as waffles and like that product the best. I have a Belgian waffle maker and I cook these on a well oiled maker for 6 minutes. Enjoy!
This recipe can be tweaked depending upon your flour. I have made these with Namaste gf flour and used the following ratio: ½ cup gf flour, ¼ cup almond flour, ¼ oat flour.
White flour ratio: ¾ cup flour, ⅓ cup almond flour, ¼ cup oat flour.
