The underside of the noodles didn't crisp for me, but I did accidentally add 2 tbsp of oil to the noddles instead of 1 for noodles and 1 for the leftover marinade. I also didn't really have much leftover marinade so I couldn't put as much as I would've liked on the bok choy. But I like the taste of baked bok choy on its own so I didn't mind

Definitely necessary to at least double the marinade!! I think the instructions might have specified putting the tray on the bottom to get it more crispy and then move to the top for the second part… will have to double check!

I did put the tray on the bottom first and the top of the noodles started to crisp so I thought the bottom was done. But apparently not haha
