This is soooo good. I made it and let it sit in the fridge until the next day and all of the flavors melded together well. I added extra curry and salt and some jalapeños and it was delicious. This is a definite keeper. It's perfect with some sprouts and spinach in a whole grain wrap.

I did the same; Nice way to let it sit & marinate. Made it today for work lunch tomorrow.
