It tastes good, but not amazing for the amount of ingredients, amount of chopping and cost. Basically a more citrus-y/sour pesto dressing on cucumber and iceberg lettuce. I might make it again in the summer to bring to a potluck but otherwise I probably won’t make it again.
I paired it with a piece of salmon, and that combination is nice as a lunch; would recommend a carb to round it out for dinner.
