This was excellent. A good balance of savory and spicy. It didn't remind me of minestrone, as others have said - maybe halfway between minestrone and vegetarian chili. I added farro to round it out, and next time I'll top it with parmesan. A great winter dinner.
Notes to self for future:
Used 1 red onion, not 2. Used 1 can fire roasted toms and one regular. Used Bon Appétit's "Frijoles de la olla" recipe to cook the beans from dry, since they were not available canned.
