Alrighty! Loved this combination do much that we just HAD to do it again. But this time, I added a little fresh basil and pine-nuts into the salad, as well as a conservative amount (maybe a Tbsp) of white wine vinegar. Incorporated spinach instead of serving it on a bed of spinach. SO SO good!
