So good and easy, easy, easy. I'd definitely say shredding your own cheese is the way to go, don't do preshredded packaged cheese.

Why wouldn't you use packaged grated cheddar?

Because it has a coating on it to prevent it from clumping in the bag and it doesn't melt the same and the texture (due to coating) isn't that great as well.
