Cara, if you make a paste with margarine and flour then add the broth and keep whisking it should thicken then I add milk (because to me heavy cream is way too much) get this hot enough to thicken then turn off heat add the cheese til it melts. Also, a great seasoning is called vegeta (found on Amazon) but just a pinch goes a long way on flavor. Too much and it will be too Salty. Love this soup.
