We had frozen diced potatoes that we used instead of fresh potatoes. That cut down on the cook time. We didn't have tomatoes on hand, so we omitted those. Also, I'm not a big onion person so it was too oniony for me. Next time we'll probably use 1/4 of an onion instead of half (we made 2 servings instead of 4). Great recipe though. Easy to make adjustments to what you have on hand.
