Brown only a little beef at a time (walnut size clumps) else it will release water and not brown properly.
Discard the fat from sofritto. Cook it on low heat so it sweats and then browns.
Do both simultaneously to save time.
Made in instant pot.
Use 1/2 cup wine. Use 1 cup milk. Use 8 tbsp tomato paste. Added orange bitters and Frank’s red hot sauce. Sautéd the tomato paste a bit and other stuff before adding liquids. Did not need stock.

In the end drained excess fat and finished with cream.
