Really tasty! I did Cajun seasoning in lieu of the Italian seasoning. The potatoes do get very mushy at this time/temp, so I’d maybe do 5 or so minutes less than what was called for. I’d also double it next time to make 2 sheet pans worth for additional leftovers.
