Mama made potato pancakes with left over mashed potatoes. Boy are they good. Mix an egg and some flour into leftover mashed spuds pat them into pancakes and fry in a cast iron skillet in bacon grease. Mmm

You can also put mashed potatoes in a bowl and add egg flower and a small amount of onion and mix well may have to use a few drops of milk to mix well and fry as you said. These to are great. Wish I had some left over mashed potatoes.
