My partner said this was as good as rice from the Chinese! Used this recipe as a base but mixed it up a bit- used chicken and prawns and broccoli instead of peas. Grated fresh ginger and fried this with chilli, garlic and a pinch of cumin powder in a mix of olive and sesame oil. then added diced chicken to cook, then added diced broccoli and stir fried, then prawns, then cooked rice. I occasionally popped the lid on the sauté pan to steam the broccoli and prawns through. Then scrambled the eggs in the mix, mixed through added spring onions, soy sauce and a dash of oyster sauce and mixed to heat through.
