I added spinach to the pan half way through baking to add more color/veggies, and overall liked it very much! Definitely will be making this again.
I used bone-in chicken thighs, just because that's what I had on hand, cutting off the skin before searing it. It turned out great and was pretty easy! My only note is to put some of the sauce on the table, either in a bowl or gravy thing, as something for the pasta.
