Wow, this was delicious! My son (10) and I loved it! This will be a repeat for sure! I think I'll also use this recipe to add dumplings to for Chicken & Dumplings. I made a few substitutions to use what I had on hand:
I added wine to the broth to deglaze the pan. (I had red on hand, but white would be delicious). I used a little ketchup since I didn't have tomato paste, but I didn't mind the added sweetness & only used abt 2 tbsps. I used dried herbs, boneless skinless chicken breast, russet potatoes, and then celery instead of peas. I also subbed gluten-free flour (Bob's Red Mill 1-1 Baking Flour). It was amazing, even with the substitutions! After 4 hours on high, the chicken shredded with a fork & was so juicy & tender!
