I made this without the coffee since I don’t like coffee and it’s wonderful! The flavor of both the cupcakes and frosting is mint but not overpowering - it reminds me of a mint chocolate cookie. The frosting is light and creamy. I used some crushed candy canes as garnish. Will be making for Christmas this year.
