Roux can be tricky. It took me a while. Add the milk really slowly. Whisk until smooth before adding a little more. It will be a little time consuming but it will work out well. I do only about 1/4 cup or a little more (maybe 1/3 cup) at a time. Just make sure it’s all smooth and well blended before more milk is added. Hope this helps.

Use a tiny bit of cold water to powdered ingredients and turn it into a slurry first no lumps
