Surprisingly good! The peels actually came together well, though the flavor will depend strongly on the BBQ sauce used. (It is weird that this recipe suggests the author’s cole slaw which involves freshmade “vegan mayo” but doesn’t freshly make the BBQ sauce.)
Two banana peels was good for just two (slightly large) sandwiches. I’d probably approximate this as one peel per sandwich in the future.
After peeling off the skins, I put the banana fruits in the freezer for frozen banana desert. Other than just eating the fruit, I didn’t see a great way to fit them into this meal. If, opposed to the author’s tips, you used plantains then the fruit could be made into plantain chips in the oven.
I probably won’t make this exact recipe again, but I intend to make shredded banana peel again!
