Just what we were looking for on a rainy Sunday afternoon. Comfort food that was inspired by eggplant, tomatoes, oregano, and mozzarella cheese. Of course I used the sliced cheese so it oozed all over. Love the crispy bits on the sides!!! Definite do over!
