I used chicken breasts (even though the recipe says not to, oops 🤷♀️), kept them whole, seared them on both sides but still pink on the inside and added them back in later on to cook with the veggies until they were all cooked through. Thankfully this method helped the breasts from drying out. I added green beans along with the carrots and potatoes. And since the broth didn't thicken as much as I expected, I added a couple tablespoons of butter at the end to add some richness. Overall a really warm and delicious stew.
