LOVE THIS. It has been my go-to side dish for years because it’s both a starch and a veggie. Looks beautiful, feels special but is easy peasy to make. I especially like making this when I have a complicated protein because it’s served room temperature which allows me to fully focus on the warm protein. I typically make the pearled couscous earlier in the day and throw it in the fridge to further expedite making it at dinner time. Highly recommended!
