I tripled the recipe and added extra cinnamon along with some mace. Then I mixed everything but the baking powder and baking soda, and let it work for about an hour or 2 until I was ready to cook them. The batter was too thick, probably because I used mainly whole grain flours and I usually weigh my ingredients rather than measuring by cup. They were very fluffy, but needed longer to cook to not be doughy. Even so, they were delicious! Tasted like cinnamon muffins! And i just thinned with a little milk to get them a little thinner. I had batter left over, and it is happily working away in its jar waiting to make more pancakes.
