This recipe is a good meal prep recipe! I’ve made it three times so far and have tweaked it each time. It ends up tasting a bit different each time, but always good. Here are the things that I consistently change from the recipe:
1. Skip the lime zest and stick to lime juice only
2. Add a habanero instead of red chile
3. Usually make 1.5-2x the marinade than the recipe calls for because I prefer a little extra sauce
4. Opt for rice instead of quinoa
I’ve never actually made the bananas that go along with this recipe, but I would suggest that folks use plantains instead if they’re available to you.
