i don’t know if it was the chicken I used but I found it to be runny. I wouldn’t use the chicken stock next time. I added taco seasoning bc I felt there wasn’t enough seasoning. I also will chop up jalapeños bc they were hard to eat in halves. Not bad, but not amazing either. I do think this would be a good stuffing for enchiladas though.

Not sure why it's runny, but it does seem as if the jalapeno peppers weren't meant to be cut in half, but in strips.
I'll be making this a little later and will follow to the T. I'll let you know if mine turns out runny as well.
