Question? Can I use an equal amount poolish preferment swapped in instead of sourdough starter for this recipe?

Hi - I actually tried this when I was developing my yeasted focaccia recipe! From what I remember, it didn’t turn out super well - I ended up coming up with a different method using instant yeast and it’s much better…search “overnight focaccia” on Whisk and you’ll see it!
