This soup needed a bit of modification for my taste buds. Firstly, vegan mince is a bit bland so I sprinkled a vegan Oxo cube in as well as some vegan beef stock powder. I added half the juice of a lemon, an extra half tsp hot sauce, I never used the full amount of cheese, probably three quarters of the amount and a quarter cup of nooch. I made my own sour cream (go to Harmless Vegan Recipies for recipe). I also added 4 chopped up slices of jarred jalapenos. I then pressure cooked for five minutes. Thickened with Smash potatoes. I probably would make this again but I think I would air fry the the mince a bit for texture. Also, it's expensive to make although I reckon I'll get 8-10 decent portions out of it.
