Of all the baked oats I've made, I think this one is my favorite. The difference seems to have been making the batter the night before and then baking it the next morning. Allowing the oats to soak up the mixture gave almost a banana bread texture, soft and moist. I also used chocolate peanut butter, not a must, and I'll be trying it with another nut butter next time. (also, I increased the ingredients to feed my crowd of 8-10)
