I followed the directions as written, except for leaving out salt due to a low sodium diet, the optional step of using an immersion blender adds a delightful creaminess to the soup, I highly recommend it if you're able! Plenty of leftovers for two people!
Edit* I've made this about a dozen times or more now and this remains one of my all-time favorite recipes. Such delicious comfort food! If you want it a bit spicier, swap out the red pepper flakes for aleppo pepper to get a bit more rich flavour with a bit less heat. We've made this for family and friends on multiple occasions, serve with some sourdough bread and butter and this is an instant favorite for family and friends!
