This was actually really great (and I forgot to take a picture cause I kept eating it so here’s my half eaten soup). I actually loved the cauliflower replacement. Not gonna lie I thought that you were supposed to blend some cauliflower and I’m interested in that. I also accidentally got normal almond milk not unsweetened and I actually wonder if that added the sweetness that clam chowder tends to have. I added a few things to make it better: parsley, thyme, a little more umami/savory seasoning (like msg, mushroom seasoning, or just chicken boullion or something more savory), and red wine vinegar (or any acid, sure lemon would be great, too). The red wine vinegar was really what made it. I also don’t know why we can’t add celery and onion because I think that would add to the flavor. I get it’s 5-ingredient but I think it would make it better :)
