I used ground turkey instead of ground beef. I followed other reviewer's recommendations and left out the salt and sugar and also used low sodium options for beans and beef broth. No other changes were made and it tasted delicious. If you have a sensitive pallet, I would recommend cutting back on the chili powder and avoiding the Cayenne pepper. Very tasty and super easy to make.
Update: I think I will cut the cumin in half when I make this next. Seemed to be a bit strong in my first batch (especially when eating leftovers).
