i boiled 1 carrot in cubes and broccoli stem cubes with the florets.
for the mixture, i used nutritional flakes instead of parmesan, and chickpea flour instead of regular (i had some leftover). i also mixed in some panko to see how it would turn out. for additional flavor, i put in some paprika powder and cilantro powder.
i also cooked an onion with the garlic before adding it to the mixture.
i ate them with sriracha mayo. very nice! had to add a little water to the batter as it became a bit dry with the panko. next time i would like to try them with a lighter sauce like a ranch or yoghurty dip.
