Added only 1 tbsp chia seeds; 520g flour --> 2c bread flour & 1 2/3c white flour; 360g water & 115g starter (maybe like 2/3c) bc mine is a little watery. Our house is cold so I proofed for ~20 hour. What a great recipe!
