Really tasty, cozy soup for a rainy spring day!
Changes I made:
- Added a washed, drained can of garbanzo beans to the roasting pan.
- Added a cup of water because of the additional beans.
- used chicken broth (mostly cause I didn't have any
- Added the following spices when I added the broth: Cumin, Paprika, Tarragon, chili pepper flakes and Italian Seasonings
- Mixed 1/4 of Greek Yogurt and 1/4 of almond milk to make a pseudo heavy cream. Added at the end right before blending.
- skipped the lemon because if the dairy
And I was seriously happy with the results!
