Hi! I’m a huge fan of this recipe myself; I added it having made it previously, but like you, I didn’t want the round meatball shape, I didn’t think they’d play nice with the flatbread format. Also, since I traditionally see Greek Gyros as sliced thinner, long and narrow, i shaped my “meatballs” *instead* as thinner, longer and narrower “patties” which then lay flatter after cooking and thus were easier to layer with condiments and eat in the flatbread. :)
